I remember one year during Christmas two of my cousins were fighting over who would get the panini maker that was given for gift exchange. This was quite an amusing scene. The model you are looking for is the GR-4. The 4 stands for 4 functions - it works as a contact grill, a panini maker, a flat grill, and a griddler.
It has hinges on the sides to adjust to any size food you are going to grill.

I have the Cuisinart Griddler Jr. and I absolutely love it. It has all the features of its larger cousin, but it is compact and fits on my counter perfectly. I use it mostly to make panini, and to grill veggies, but you can grill anything you want on it. It can be used as a contact grill or opened flat which creates a double cooking surface. The non-stick plates snap right out for easy cleanup as well. I think it is the most useful appliance I've ever owned. In fact, I use it just about every day. For a larger family, the Cuisinart Griddler 4 is ideal, but the Gr-3 is the perfect size for me.

I love my panini maker, but it is a cheaper brand. It works fine and it does have the removeable plates, there is so much you can do with it. Great hub
